Tomato Tart

Ingredients
1 pie crust
8 oz. shredded mozzarella cheese
12 oz. fresh mozzarella, sliced
6-8 plum tomatoes, sliced into ½ inch thick rounds
7 or 8 fresh basil leaves, chopped
Salt and pepper
Olive oil
Instructions
Pre-heat oven to 375 degrees F. Spread pie crust in a tart or pie pan. Sprinkle shredded cheese on top of crust. Add layers of sliced tomato and fresh mozzarella. Sprinkle top with chopped basil, salt, and pepper. Drizzle with olive oil. Bake at 375 degrees until cheese is brown and bubbly (between 15 and 20 minutes). Garnish with fresh basil and serve.
This tart can also be made without the fresh mozzarella rounds.
