Morning Glorious Muffins

2 c. flour

1 ¼ c. sugar

2 tsp. baking soda

2 tsp. cinnamon

½ tsp. salt

1 ½ c. shredded carrot

1 ½ c. peeled and shredded apples

¾ c. coconut

½ c. snipped pitted dates

½ c. chopped pecans

3 eggs, beaten

1 c. oil

½ tsp. vanilla



Pre-heat oven to 375 degrees F. Grease a standard muffin tin or line with papers. In a mixing bowl, combine flour, sugar, baking soda, cinnamon, and ½ tsp salt. In another bowl, combine carrot, apple, coconut, dates, and pecans, then stir in the eggs, oil, and vanilla. Add the wet ingredients to the dry ingredients. Pour the batter into the muffin tin.

Bake for 18-20 minutes or until a toothpick comes out clean. Turn out and cool on a wire rack.
